A French Macaron Gift for Thanksgiving in New York

The case for a box of six, and the hundred we are hand-making for the 2026 release.

You are invited to a Thanksgiving dinner. You already know the host owns a nicer bottle of wine than the one you can bring, bakes a better pie than any you can carry across town, and will politely take anything you hand her at the door and set it in the kitchen out of sight.

You want to bring something that she keeps. Something that goes on the counter, not in the cupboard. Something that gets opened the next morning with her coffee, and photographed before it is finished.

For the last six years, in Paris, that gift was almost always the same thing: a box of macarons. In New York, it is not — because the macaron, as it is sold here, is often a souvenir of a real one. We are trying to change that.

Why a macaron, and not another dessert

A pie is for the dinner. A macaron is for the morning after.

Thanksgiving dessert is already crowded. Your host is making a pie, probably two. If you bring a pie, it goes next to hers — and gets sliced into when nobody really needs more. If you bring chocolates, they get passed around with the coffee and finished that night. Neither is a gift the host will remember on Monday.

A box of macarons is a different object. It is small enough to be a gift, not a contribution to the meal. It survives the night, refrigerated, and improves on the second day. It is beautiful enough to leave on the counter, so your host sees it every time she walks into the kitchen for the next four days.

The host also eats it. Alone, probably, standing in her kitchen on Friday morning before anyone wakes up. That is the moment your gift lands.

What is in the Thanksgiving box

Six macarons, hand-made in New York for the 2026 release. Each box is composed on purpose — two of the signature flavours, one of each of the two others — so that the host can share, or not, as she chooses.

The quiet differences

Three things set these apart from the macarons you have had in New York before.

Less sugar.

A commercial macaron is 55-60% sugar by weight. Ours are tuned closer to 40%. You will taste the chocolate, the pistachio, the raspberry — not a wall of sweetness.

No preservatives.

Which is why they live five days. We bake Thursday for a Sunday eating window. The box arrives fresh and must be eaten in the week. See Our Method for the full timing.

Imported where it matters.

Belgian couverture, Sicilian Bronte pistachio, Guérande fleur de sel, Bourbon vanilla, French almond flour. American where it is better: Hudson Valley butter, New York pecans. The full list is on Our Pantry.

Why only a hundred

Because they are made by hand, in small batches of thirty-six at a time, in a professional kitchen in the New York area, by one baker. One hundred boxes is five baking days, from the first shell piped to the last box closed. More than that, we cannot do without changing what the macaron is.

The list hears about availability first. Reservations open from the waitlist. When the hundred are gone, we close the release and go back to the kitchen to prepare the next one.

How to reserve a box

Add your email to the waitlist. You will hear from the maison when reservations open — before the box is on sale publicly — at the founder's price of $19.90 (reserved for the list).

Pickup or local delivery in the New York area. One box per person, so the hundred reaches a hundred people.

If you are bringing it to a Thanksgiving dinner, we recommend reserving at least a week in advance and picking up on the Tuesday or Wednesday before. The macaron peaks on day two or three of its five-day life — which means a box picked up on Wednesday is at its best on Thursday night.
